Warm Asparagus Salad with Soft Boiled Egg

Asparagus, bacon and eggs are tossed together with vinaigrette to make this warm salad.
1 pound Signature Farms™ asparagus (cut into 3-inch pieces)
8 slices thick cut bacon (cooked and cut into 1-inch pieces)
4 soft boiled eggs
1/3 cup extra virgin olive oil
1 tablespoon red wine vinegar
1 teaspoon lemon juice
1 clove minced garlic
1 teaspoon honey
1/4 teaspoon kosher salt
1/8 teaspoon pepper
1. Preheat oven to 450º. Whisk together olive oil, red wine vinegar, lemon juice, garlic, and honey.
2. Place asparagus on a rimmed baking tray and toss with half of the red wine vinaigrette. Season with salt and pepper. Roast for 5-7 minutes, until slightly crisp.
3. Remove asparagus from oven and top with bacon, eggs, and remaining vinaigrette.
