Warm Asparagus Salad with Soft Boiled Egg
Asparagus, bacon and eggs are tossed together with vinaigrette to make this warm salad.
- 1 pound Signature Farms™ asparagus (cut into 3-inch pieces)
- 8 slices thick cut bacon (cooked and cut into 1-inch pieces)
- 4 soft boiled eggs
- 1/3 cup extra virgin olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon lemon juice
- 1 clove minced garlic
- 1 teaspoon honey
- 1/4 teaspoon kosher salt
- 1/8 teaspoon pepper
Preheat oven to 450º. Whisk together olive oil, red wine vinegar, lemon juice, garlic, and honey.
Place asparagus on a rimmed baking tray and toss with half of the red wine vinaigrette. Season with salt and pepper. Roast for 5-7 minutes, until slightly crisp.
Remove asparagus from oven and top with bacon, eggs, and remaining vinaigrette.
