Tomato Basil Pasta Cups
Transform a pasta dinner into bite-sized appetizers! Our fun Tomato Basil Pasta Cups are a tasty and unexpected finger food. Your guests will exclaim over how cute—and delicious—these nibbles are. Plus they’re easy to make!
- 6 ounces O Organics® spaghetti
- 2 O Organics® egg yolks
- 1 cup grated Parmesan cheese
- 1 medium sweet onion (diced)
- 12 ounces O Organics® ground beef
- 1/2 teaspoon kosher salt
- 12 ounces O Organics® tomato basil pasta sauce
- 3/4 cup shredded mozzarella cheese
- fresh basil (sliced)
Preheat oven to 375º. Cook pasta according to package directions. Drain and set aside to cool slightly.
In a medium sauté pan sprayed with cooking spray, add onion and sauté until translucent. Add ground beef and salt, breaking up the beef with a wooden spoon as you cook it. Sauté ground beef until browned. Turn off heat and stir in 12 ounces of the pasta sauce.
In a small bowl, add egg yolks and toss in the slightly cooled spaghetti. Toss to coat every side of the spaghetti with the egg yolks. Add Parmesan cheese and fold into spaghetti until it is fully coated.
Spray a muffin tin with nonstick spray. Divide spaghetti among the 12 muffin tins, making a little well in the middle. Fill each with meat and sauce mixture, spooning it in the middle so it is surrounded by spaghetti. Sprinkle a tablespoon of shredded mozzarella on each.
Bake for 20 minutes. Remove and let cool for 5 minutes, then remove each pasta cup, sprinkle with fresh basil, and serve.
