Pineapple Pomegranate Guacamole
Liven up classic guacamole with this unique twist on the traditional favorite. This guacamole is packed with seasonal fruits and boasts a hint of sweetness paired perfectly with a bit of spice. Jalapeño, cayenne pepper, lime juice and pineapple create the perfect seasonal guacamole.
- 3 medium avocados
- 1/2 cup diced pineapple
- 1/3 cup pomegranate arils
- 1 finely-diced jalapeño, seeds and ribs removed
- 1/4 cup finely-diced red onion
- juice of 1 lime
- zest of 1 lime
- 1/2 teaspoon kosher salt
- 1/4 to 1/2 teaspoon cayenne pepper
Scoop avocado flesh into bowl and lightly mash with fork. Add remaining ingredients and stir to combine. Serve immediately.

If not serving right away, cover with plastic wrap, laying wrap directly on top of guacamole to prevent browning.
For beautiful presentation, garnish with additional pomegranate and pineapple pieces.
For extra spice, use the whole jalapeño. The seeds and ribs carry extra heat!
