Garlicky Shrimp and Green Beans
Delicate angel hair pasta allows the flavors of shrimp, shallots, garlic and fresh green beans to shine in this easy pasta dish.
- 1 pound angel hair pasta,
- 12 ounces fresh green beans, sliced on the bias into 1-inch pieces,
- ⅓ cup extra-virgin olive oil,
- ⅓ cup sliced shallots,
- 4 cloves garlic, sliced,
- ¼ teaspoon red pepper flakes,
- 1¼ pounds small shrimp, peeled and deveined,
- ¼ cup chopped parsley,
- ½ teaspoon salt,
Bring a pot of salted water to a boil. Add pasta, return to a boil and cook 6 minutes. During last 3 minutes, add green beans. Drain, reserving 1/2 cup of the pasta water.
Meanwhile, heat oil in large skillet over medium-high heat. Add shallots, garlic and red pepper flakes; cook 1 minute. Add shrimp. Cook 1 minute, flip and cook 1 minute more. Stir in parsley.
Transfer to a large bowl. Toss with pasta, reserved pasta water and salt.
