Brown Sugar & Mustard Glazed Pork Blade Roast
This Brown Sugar & Mustard-Glazed Pork Blade Roast is the perfect weeknight dinner! The Dijon mustard and brown sugar combine to create a simple, tangy-sweet flavor. The simpler the seasoning when cooking pork, the better since it already has a lot of flavor on it's own.

- 1, 4 to 5 pound pork shoulder blade roast
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 2 cups water
- 1/4 cup Dijon mustard
- 1/4 cup packed light brown sugar
Preheat oven to 325°. Season roast with salt and pepper. Place on a rack in a roasting pan and add water to bottom of pan. Cover with foil. Bake for 3 ½ hours.
In a small bowl, mix to combine mustard and brown sugar. Increase oven temperature to 375°. Remove foil and baste with 1/2 of the glaze. Return to oven uncovered for 15 minutes. Baste with remaining glaze and cook for an additional 15 minutes. Remove from oven and rest tented with foil for 15 minutes. Slice or shred. Serve.
