Keto Bento Box
Hard-boiled eggs and protein-packed prosciutto are staples in this keto-friendly bento box! Finished with veggies, plain Greek yogurt and chunks of cantaloupe, this box is perfect for an energizing, on-the-go lunch or snack.
- 1 O Organics® hard-boiled egg
- 1½ slices prosciutto
- 2 Tablespoons cream cheese
- 6 asparagus spears, blanched
- 1/4 cup plain Greek yogurt
- 1 teaspoon minced dill
- 1/2 teaspoon lemon zest
- 1/4 cup yellow cherry tomatoes
- 1/4 cup celery sticks
- 1/4 cup broccoli florets
- 1/2 cup cantaloupe
Slice prosciutto into 3 pieces. Spread with cream cheese and wrap around 3 asparagus spears. In a small container, mix to combine Greek yogurt with dill and lemon zest. Assemble all ingredients into container/containers. Keep refrigerated until ready to serve.
